Cold pressed extra virgin olive oil is a distinguished low acidity (0.3) oil with an exceptional savor, color and aroma. It is produced with the method of cold extraction (exposed to less than 27°C temperature during all the stages of its process): olives are carefully harvested by hand, then they are washed with cold water and the oil is extracted within 2 days through low temperature mechanical means, while avoiding chemicals or filtering.
This method of production allows the cold pressed virgin olive oil to retain the most of its nutrients and become a real nutritional treasure, mainly due to its richness in antioxidants and monounsaturated fatty acids.
