Successful production of premium quality olive oil requires work throughout the whole year.
Starting in January, immediately after the harvest, we lubricate the soil with organic fertilizer using selected by-products of the mill. March is the time of pruning of the trees. We make sure that air and sunlight are able to pass between the branches for better flowering of the plant.
In warmer months we make sure we assist the soil by carefully watering the perimeter of the trunks.
Starting from October up until January is the time of harvest. We use the method of threshing and collect the fruit in crates, so as not to injure the fruit during transportation. At the end of the day, the olives are transported to the mill to get crushed.
The processing begins aiming to produce low acidity premiun quality olive oil. Centrifugation at low temperatures and filtering ensure the high quality of ACROPOLIS olive oil.
Later, when the oil has been collected in stainless steel tanks we proceed to bottle it in sterilized glass bottles of dark color to ensure hygiene maintenance.
